This is one of my favorite Healthy Slow Cooker dishes! You will feel so satisfied after eating this, and proud that you've eaten something that's actually good for you!
I'm going to be frank here......this does not take a few minutes to put together. So, it's definitely not a meal you want to make when you're busy. Save it for a day when you have a little bit of extra time. It makes plenty for leftovers, so you can even make it on the weekend and eat it a few days into the week, or freeze it for a day when you're in a pinch!
When I made this, my entire family enjoyed it! (Kids and all!) My daughter especially liked the little corn! LOL She's fascinated with anything mini!
Healthy Chicken Chow Mein with Rice Noodles
Ingredients:
2-3 Large FROZEN Boneless Skinless Chicken Breasts
2 Cups Water
2 Onions, chopped into slivers
2-3 cups chopped celery
2 tsp. quick cooking tapioca
1/4 cup low sodium soy sauce
1/4 cup brown sugar
1 (16 oz) can baby corn, drained (or use fresh)
1 (6.5 oz) can bamboo shoots, drained (or use fresh)
1 cup bean sprouts
1 red bell pepper, chopped into slivers
1/4 carrots, chopped into nice thin matchsticks
kosher salt to taste
pepper to taste
Asian Rice Noodles
Directions:
Place your frozen chicken breasts in the Slow Cooker with the water, onions and celery. Cook on LOW for 6-8 hours.
In a bowl, mix the tapioca, soy sauce and brown sugar together. While you shred the chicken, place the carrots, red bell pepper, baby corn, bamboo shoots and the sauce you just mixed into the Slow Cooker. After you shred the chicken, add it to the Veggies in the slow cooker and stir. Let this cook on HIGH for another 1/2 hour to hour.
When you're about ready to serve, cook your rice noodles according to directions on the package. Put Kosher Salt and olive oil in the water so the noodles don't stick and gain some flavor. Serve your Chicken Chow Mein over the noodles and Enjoy!

Hope ..Thank-you for this blog I am a grampa that started using a crock-pot to cook dinner for my grand-daughters and found a creative side and I try for perfection.......I am routinely challenged....But enjoy the experience...........
