Balsamic-Dijon Chicken With Portobellos

Pancake syrup in a mustard sauce? Yup, and it's super good, too!

My wife and I met some friends for lunch one day. I had dijon chicken, and it was mighty fine! I liked it so much that I tried to find something similar on the web. Bottom line is, I got distracted when I ran across the initial iteration of what you see below.

I added a little, and took away a little and what I ended up with was this sinfully-good dish. Hope you like it.

BALSAMIC-DIJON CHICKEN WITH PORTOBELLOS

4 whole boneless and skinless chicken breasts

1/4 cup good-quality aged balsamic vinegar
4 tablespoons yellow mustard
4 tablespoons Dijon mustard
1/4 cup pancake syrup
1 teaspoon sea salt or 1 ¼ of regular salt
3 Cloves Garlic
6 tablespoons extra-virgin olive oil
Pkg Portobello Mushrooms

Freshly ground black pepper to taste

Preheat oven to 400°.

In a large bowl, combine balsamic vinegar, yellow mustard, Dijon mustard, pancake syrup, olive oil, garlic and pepper.

Dip each chicken breast into the sauce, covering all surfaces. Place chicken breasts, single layer, into an un-greased baking dish

Pour remaining sauce over chicken breasts.

Layer mushrooms over chicken in baking dish and brush some sauce over mushrooms.

Bake for 25 to 30 minutes

Makes 4 servings.

Serve in combination with this sinful butter-sauce-baked green beans and red-skins as directed, below

3 med sized red-skins
1 pkg of fresh green beans
3 tbsp butter
3 tbsp olive oil
3 shakes ground basil leaves
3 shakes seasoning salt such as Morton Season All w/Garlic
Grated Parmesan Cheese

Microwave potatoes till done. For me, it takes 6 minutes in a potato bag on high.

Microwave package of green beans, usually 3-4 minutes on high

Put butter, olive oil, basil and seasoning salt in small bowl. Microwave for a minute, or so to melt the butter.

Blend it all together till well mixed.

Place peeled, quartered potatoes in the butter sauce, then spoon them out into a 6x6 baking dish.

Dip green beans into the butter sauce then place them into a 6x6 baking dish.

Pour the remaining butter sauce over both dishes

Shake, or grate Parmesan Cheese over both dishes (to taste)

Cover both dishes and place in oven next to the chicken dish. This should give them 10 or 15 minutes in the oven. (remember, these are already cooked but this gives the butter sauce a chance to sink in a little.
